We all love potato fries, but these nutrition loaded avocado fries are a close runner-up in taste, and an obvious winner for your health!
2 large avocados
Juice of ½ lime
Salt and pepper
¼ cup flour of choice
1 egg, lightly beaten
1 cup breadcrumbs
2 tbsp olive oil
1. Preheat oven to 400 degrees F or 200 degrees C. Pour 1 tablespoon of olive oil in a baking dish or sheet tray.
2. Slice the avocados and squeeze fresh lime juice over them. Season with salt and pepper.
3. Roll the avocado slices in flour, then dip in egg and coat in breadcrumbs.
4. Place the avocado slices on the sheet and drizzle with the remaining olive oil. Bake for 15 minutes or until golden and crispy, and serve with your favorite dip.
